RAW Chocolate Pudding

Working for Whole Foods Market has its spontaneous advantages. Scrolling through the many recipes the Health Starts Here program offers, Dee had found a recipe and made it one movie night. To our delight, we fell in love with it on our first bite and periodically Dee makes it.

Though the recipe at Whole Foods Market turns out a bit too thick, we ended up attempting all sorts of adjustments to balance the sweetness and reduce the thickness. We were successful...!

The best thing about this recipe is that it uses avocados. What a delicious fruit! In combination with cacao powder, dates, honey and vanilla extract, we get a rich and thick pudding.

Recipe According to Whole Foods Market:

Ingredients
  1. Two avocados
  2. 1 cup cacao powder
  3. 1 cup Maple syrup (We used RAW Local Honey)
  4. ½ cup dates (about 8)
  5. 1 tspn vanilla extract

Instructions
  • Soak dates in warm water for 30 minutes, then remove pits.
  • Add everything to a blender or food processor and process until smooth, adding date water if needed.
  • Chill and Enjoy!

We had experimented with this recipe, and Deanna had found that she can reduce the amount of dates down to 1 and the sweetness is just fine.

To reduce the thickness, use the water that you had used to soak the dates in, adding a bit at a time until you receive a desirable texture. We make our own coconut milk and add that to give a richer pudding (How to make Coconut Milk).

We enjoy topping this pudding with organic stevia sweetened chocolate chips, halved strawberries or halved bananas (whichever is in season or available), and sprinkled with coconut flour or flakes.

Here are additional photos, some are from 420 at Dolores park.
We joined in on the 420 celebration, did some energy work, then we ate!
